Sinopsis

La actividad antioxidante es la propiedad de una sustancia para inhibir la degradación oxidativa y actúa principalmente a través de su capacidad para reaccionar con los radicales libres y oxígeno singulete. El desequilibrio que se presenta en el organismo entre la producción de especies reactivas del oxígeno y la capacidad de un sistema biológico para inhibirlas rápidamente es conocido como estrés oxidativo. Este proceso trae como consecuencia alteraciones de la relación estructura-función en cualquier órgano. En los organismos vivos existen moléculas antioxidantes capaces de retardar o prevenir la oxidación; sin embargo, no siempre este proceso es eficiente por lo que se hace necesario proporcionar al cuerpo otras moléculas antioxidantes que ayuden a combatir el estrés oxidativo
